🏔️ Ice Berg Cheese Cake (Choco Top Burnt Cheesecake)

A. Burnt Cheese Cake Ingredients (Soft Base):
- 380 gr Cream Cheese / Cheese Spread
- 120 gr Granulated Sugar
- 2 eggs
- 220 gr Whipping Cream Cair
- 12 gr Cornstarch (Texture binder)
- ⭐ Must-Have Aroma: 1 sachet of Mohler Vanilla Paste (Practical!)
B. Ice Berg Ingredients (Blackforest Chocolate Layer):
- 130 gr Dark Chocolate (coarsely chopped)
- 200 gr Whipping Cream Cair
- 1 Egg Yolk (Makes it rich and set )
- 10 grams of granulated sugar
- 1/2 tsp Mohler Vanilla
- ⭐ The Key to Luxurious Taste: 1 sachet of Mohler Pasta Blackforest
C. Garnish:
- Chocolate Powder (Sprinkle on top of the "mountain")
👨🍳 How to Make Chef Apin's Style:
- To Make Burnt Cheesecake:
- Mix/Stir Cream Cheese and Sugar until smooth and dissolved.
- Add the eggs one by one while stirring evenly.
- Add the liquid whipping cream, cornstarch, and Mohler vanilla paste sachet . Stir until smooth (strain if necessary).
- Prepare a 16cm baking pan lined with baking paper (leave the paper slightly over the edges). Pour in the batter.
- Bake at 200°C for 30 minutes (Top and Bottom Heat).
- Remove. (The center may still be jiggly, which is normal.) Let cool at room temperature until set.
- Create an Iceberg Layer:
- Cook Whipping Cream, Sugar, Egg Yolks, and Vanilla over low heat while stirring continuously until warm (do not let it boil and break, tempering technique ).
- Turn off the heat. Add the dark chocolate and Mohler Pasta Blackforest Sachet .
- Stir continuously until the chocolate melts and the mixture becomes smooth ( thick ganache ).
- Solution:
- Pour the Blackforest Chocolate mixture over the cooled Cheesecake.
- Let it set in the refrigerator for at least 2-3 hours.
- Remove from the pan. Sprinkle with cocoa powder on top to resemble mountain soil.
- Cut into pieces and serve!
